Moving down the scale and using less insulin

My Weight Watcher's journey has been a slow, but steady road to a thinner me. With a loss of 18 lbs so far, I'm well within a healthy BMI range and down to size 9 clothes - fairly small for my almost 6' height. I had originally set a goal of a total loss of 23 lbs, but I'm thinking if I change that goal to 33 lbs, I'll hit a BMI of 22. Perhaps I should just get to that first goal (5 lbs away!) and see how it goes from there.

Weight Watchers Journey

As you can see by the Ticker on my page, I’m endeavouring to lose a few pounds, 23 to be exact. It’s that slow creeping gain and ever expanding waistline that started about 10 years ago for me. I don’t want to exercise more than I currently do (it’s a dirty word, but I do my best!), and I need the support and personal accountability to be successful around my favorite subject, FOOD! Quick Cauliflower or Broccoli Soup

This is my new favorite low-carb, low-calorie, yet filling soup. It's still cold and snowy in the Yukon, and a hot bowl of soup with salad for lunch or dinner always hits the spot! Roasted Red Pepper and Tomato Soup

Roasted Red Pepper and Tomato Soup

Ingredients

3 red peppers
2 tbsp olive oil
1 tbsp roasted red chili paste (you can substitute hot sauce or crushed red pepper flakes to taste – go easy on people who don’t like too much heat!)
1 clove garlic
2 (14 oz) cans diced tomatoes
2 tbsp red wine vinegar
2 cups chicken stock
salt

The closest I came to the YUKON was when I was working as a porter on CNR TORONTO TO VANCOUVER run for 15 years, a couple of times I went to PRINCE RUPERT, in the 40s. insulin-dependent since 1977 and a ROLE MODEL to at least 40.000, have learned from some of the top people in diabetes and at 91 still trailblazing and acting like I am in my sixties. I have an idea and since your into cooking good food, why dont you think of having a diabetes feast on INSULIN APPRECIATION DAY, JULY 30,collect your best chefs and diabetes health professionals, and supply a diabetes meal, EVERYONE can eat and enjoy. Start up an AMIGOKIT way of networking, that is call up 5 diabetics EVERY DAY, it will serve 2 purposes, make someones DAY and maybe save a LIFE, tell each one to call 5 people and so on. Its worth a try to start this kind of support.My contribution towards this DAY is asking insulin users, globally to join me, in silence,and give THANKS for us living a healthy lifestyle, TODAY. hi maureen,
thanks for adding me to your friend's list. i thought it stayed cold where i live. i think you have me beat. i live in ny about two miles from lake erie about half way between buffalo, ny and erie, pa. it's more then cold enough for me.
i've been checking out your recipes. i love the bean soup, i'm the only one in my family who will eat it though. no problem, i'll make it and freeze it in small bags. just like my pea soup. i know i shouldn't eat peas, but i love it and i make sure i don't eat any other "starch" along with it. as long as i do that i don't see a rise in my sugars. i was just going to tell you to have a nice memorial day week-end. silly me. i don't think we share that holiday, do we? lol!!
