Hi

Sorry...I am not shy, I just have no clue how to post a photo. This is my dear departed greyhound from an old file. I was diagnosed with type 1, 3 years ago at 50. People wondered how I got "adult onset diabetes" while living such a healthy lifestyle. Hmmm......shows you how uninformed the lucky, general public is. I jumped in and read everything I could get my hands on and started out committed to besting this with tight control. After some scary lows and raging hormonal highs, I have lost my e… Continue

Hey Elaine,
This autoimmune business is for the birds. Because I was diagnosed with type 1 at the age of 43 I asked the doctor"Why me?" He said the autoimmune Hashimotos and just purely horrible luck caused the type 1. I also called my sister since she has Hashimotos and told her to get a free glucometer from her physician's office and check her blood sugar weekly. Most people with Hashimotos never get type 1 and that's why the doctor siad it included horrible luck. But I'm cured now and couldn't feel better. Have a Happy New Year and say hi to your dogs for me!
Sincerely,
Colleen

Hi Elaine,
The pancreatic transplant changed my life permamently! I have never felt this good and the surgery is a cure. No more insulin or hypoglycemia. My three dogs are wonderful. Two we got from the pound and one I rescued from an incredibly abusive family. He almost starved to death but I took him for his first vet visit before I took him home. Luckily no heartworm and he got started on preventitive medication. The vet got rid of fleas, ticks, and worms and got the meds for that. Considering how horribly he was treated, he is the nicest dog around. I love them very much. No, my dog was not trained to sense lows but everytime I went low and faded into unconsciousness, she was there to wake me up and I knew I had to get orange juice.. She may have saved my life on more than one occasion. Dogs are truly the best gift God has given us! Have a Happy New Year!
Sincerely,
Colleen

The drawback of course (what else, always a drawback!!!) is that it's pretty high in carbs, what with the rice on top of the bread...but don't say no...just go easy is all!...I sense from what I've read, that you're lactose intolerent??? There many alternate margarines out there, so that shouldn't be a problem.

Elaine,

I finally got around to trying all the other Zevia flavors. I would say that I agree with you on the cola. My two favorites are definitely the orange and the ginger root beer.

Hi Elaine....linda to the rescue with requested recipe ( though I'm sure I'm wont be the only one!!) This one will stuff a 12 lbs bird...but if doubled, will nicely fit in a lasagna pan, which is perfect if you prefer to cook it outside of the bird! So here goes.....1 1/2 cups chopped onions 1/2 tspn poultry seasoning 1 1/2 cups finely chopped celery 1/3 cup of butter or margarine 1/2 cup of ready to serve chicken broth 8 cups dry bread cubes (1/2") 2 eggs well beaten 1 1/2 tspns salt....1/8 tspn pepper About 6 to 8 sliced, roughly chopped Portobello mushrooms...fried About 1 cup prepared chicken fried rice Cook onions and celery in butter/margarine in skillet until tender. Add mixture and fried mushrooms to bread cubes , which are already in a LARGE mixing bowl. Sprincle with seosonings which have been mixed together. Combine with fried rice. Add chicken broth and eggs, toss together with forks ( I prefer to use my hands). Stuff bird, fasten opening and place in oven. If you prefer to bake in lasagna pan, use a 350 oven, cover & cook 'til nearly done ( depends on oven and pan)...remove the cover for the last few minutes, 'til slightly browned.....Single recipe yields 9 cups...double this recipe for the lasagna pan method. Good luck...linda.

I don't know why my a1c is so good when I feel like my numbers are all over the place. Wll, not too many lows lately, but plenty of highs. I think it's mostly due to a skin adsorption problem: I've had so many needles and so many infusion sets, there aren't any good spots left!
