Both my girlfriend and my mother have diabetes. Steff was diagnosed at age 7, and my mother has adult-onset. I've been diagnosed with borderline hypoglycemia, so I'm headed for diabetes later in life as well.

My first non-food blog!

I've been dealing with a herniated disc (and a bulging disc beneath it) for months now. I was entirely sidelined and quite often bedridden, so my photography took a serious hit. I went back to work (tech support, the day job that's now overnight) a month ago, and today marked my first photo shoot since the injury. Early this morning I shot with Kristina in Altamonte. The sun came out with a vengeance, so it was incredibly bright and hot. 17 hours later, my eyes are still recovering from… Continue

Crunchy Cheesy Rice Balls w/ Cumin Chicken

Last night I made the rice balls I've been describing and contemplating for so long. I had two thawed chicken breasts, and my mother requested my Cumin Chicken dish. To accompany it I sautéed some carrots & onions, and Steff made a spinach & arugula salad with grated carrots and green onions. Continue

I had about 2 filets left from my Spicy Citrus Tilapia, along with some onions in the fridge that I'd prepared earlier. I've got chicken thawing for tomorrow's dinner, so I decided to raid the leftovers and make something of them. I've got to start keeping some lettuce or such on hand for the sake of pictures. The recipe below calls for… Continue

Mango Chicken and Salmon a L'Orange, part deux

No pictures this time. I forgot my camera, and I didn't even think about using Steff's. Both of these dishes were pretty. I wish I had photographic evidence. On Saturday, Steff and I revised my Mango Chicken recipe. We took a mango (kinda green, not as sweet as I'd hoped), cubed it, and spread it in a baking dish with two chicken breasts. Top it all with salt, thyme, paprika, and cumin. Pour in about 1/3 cup of orange juice. Bake at 400º for about an hour. We also made the now-standard Crispy R… Continue

Smoky Bacon Burgers w/ Deep-Fried Potato Balls

Tonight I revisited my Smoky Avocado Burgers, this time with the bacon I missed in the first go. I also breaded and deep-fried some leftover mashed potatoes. Smoky Bacon Burgers The burgers were true to my first recipe, except that I didn't have buns and just to… Continue
